Mommy’s Kitchen – Featuring Sonali Baindur

I am proud to bring to you my new series, Mommy’s Kitchen. Hope you like it.

If I asked you, what are your top 3 points of concern as a new mom, I know what you will say,

  1. Food- What do  I feed my child?
  2. Sleep- When will my child sleep the night?
  3. Health & milestones- Is my child healthy? When will she roll/crawl/walk/run/talk/endless list?

I present to you my first feature and also the first step into the territory, which personally to me only came into existence after I became a Mom. And that’s my kitchen.

It was until now a place where my grandmother, my mother and later my cook worked and created yummy dishes to feed me and my family. I never had any interest whatsoever in cooking.

But when I became a Mom and especially when my baby started on solids, I got super nervous. Also, because I was no more in India where I had access to good cooks. So, being an expat wife and a new mom, I quickly found my way to the kitchen and acquired necessary skills to feed my little one, my husband and me.

It is only after toiling in the kitchen, cutting fingers and sweating in front of the burning stove, I learnt appreciation  for every person who can cooks. I later realized that cooking is more than a chore. It’s an art and also a very zen exercise of mixing ingredients to form edible food that has the power to nurture body and mind.

So without much ado, let me present to you, my first ever MOM in the Mommy’s Kitchen. Her name is Sonali Baindur.

The Mommy in the Kitchen
Mommy’s Kitchen

She describes herself as a Home- Maker. In her words, ‘I am a homemaker and a hands-on mother to my 3-year-old Son. Firstly I love my family and I love cooking for them. So when I cook with a lot of love it sends good vibes and positivity in my family through food. I love trying new recipes and eating good food too.’

Let’s check out the dish she has made for our readers of this series,

Eggless chocolate Cake
Yummy.. Isn’t It ?

MOIST EGG-LESS BANANA WHOLE-WHEAT CHOCOLATE CHIPS CAKE

Ingredients: 2 ripe bananas, 1 cup wheat flour (or 1 cup all purpose flour), 1/4 cup choc chips, 1/2 cup oil, 3/4 cup brown sugar, 1 tsp baking soda, 1 tsp baking powder, 1/2 tsp salt, 1/4 cup milk.
Recipe: Mash bananas. Add brown sugar, milk and oil and stir. Mix flour, baking powder, baking soda and salt. Add this to the banana mixture. Add choc chips. Pour batter in prepared cake tin and bake in preheated oven for 40 minutes and at 140°c . You can use the same mix to bake muffins, for that pour it in the muffins tray and  bake for 20 mins at 140 degrees C.

Do try making this cake at home and do lot me know how it turned out. Thank you so much Sonali for sending us this recipe for my Mommy’s Kitchen series. I truly appreciate it.

If you have some easy-peasy, wonderful & nutritious recipes, please do send me the same with the high resolution picture of the item you cooked , and a picture of you and a brief bio about yourself and why you love cooking. Can’t wait to feature you next.

Till then,

Keep calm, and cook up a storm in Mommy’s kitchen
